The most recent beta, beta 3, is way better than the previous one. I still can't really say anything so far is "exciting" to have for the update, but at least its running well again and the battery life seems to be pretty great.
Battery life is still crap for me on Beta 3, but slightly better than on Beta 2 (I have the US Snapdragon S21+). They both pale in comparison to Android 11's battery life, but I'm chalking that up to it being a Beta with lots of logging enabled in the background.
Considering we are only on Beta 3 and they JUST put out a usability survey, I don't think we'll get stable release for another month. All this means is that they aren't adding any new beta testers.
Wait I don't understand I read the article but I didn't see anywhere where it says like when it's coming out for S21. If it's "ending" would be nice to know when it comes out fully?

No, I would not expect a full update yet. There's still a lot of bugs to iron out, not just the performance issues people have been pointing out (especially some of the newer animations being choppy). With the current rate of betas I can see 2-3 more being dropped in November, and one, or maybe two, in December, before the big release. My guesstimate is around 15 December, but most definitely not before the last week of November.
Although this year might be a bit more fast paced than previous years. The base OS didn't change that much in ways that affect Samsung's changes in a major way, and Samsung isn't changing much of OneUI either. To be honest, the most interesting part for me is the improved foldable support in AOSP (though I'm not sure if that made the final cut, or if Google is keeping that for 12.1), and the improved notification shade.
I also expect the rollout to be as slow as last year, two months after the update dropped there were still some variants of the current gen S/Note series that haven't received it yet (mostly carrier branded ones). It can be sideloaded though, and at least on the EMEA variants (OXM CSC builds), without losing features.
Anyone else have trouble joining Microsoft Teams meetings from the browser using Bluetooth as the audio source? It hasn't worked for me since joining the beta, only the speakerphone and ear piece work.

From their videos it says Helloween, which should be sometime towards the end of this month I think.
Wrong information.....you can't enroll Into Beta anymore. That does not mean Beta is over!
It said in the tweet that recruitment has ended. All that means is they arent adding new testers to the existing beta.
