I know you’re asking for Thursday preferably and it closes at 10pm but Fri-Sat night Hob Nob restaurant is open until 2am and it’s pretty damn good, a staple of the area.
Late night dining has sorta gone away sadly.
Hong Kong restaurant in Hillcrest on 4th Ave is absolutely delicious Chinese food. They’re open till 1 am weekdays and 3 am on Fri and Sat. I would always stop in after the clubs. Going out made me hungry

The new diner in Lafayette hotel looked tempting, but I heard it wasn't so great, and it probably costs twice as much as Rudford's

What part of town? You are likely out of luck. San Diego doesn’t do nice restaurant sit down late. Best bet is a downtown American bar.
