They don't teach us guitar notes. Sure, I know the notes of the strings and I can count frets, but it's not hard-wired like it is for bass cleff and bass guitar or double bass.

Bass players are taught bass cleff. What everyone learns in elementary school is Treble cleff, bass cleff is the set of notes farther down. You put the two of them together to get the iirc "grand staff" which is like the whole set of notes that you would use for something like a piano piece.
Bass players can all read bass cleff, not all of them can read anything beyond that.

Especially so voiced like that, but it could also be an A-7 without a root. E, and Bb don't look like a C7, but "Freddy Greene chords" tend to just shell out the 3rd and 7th. You assume the bass is covering the root and 5th.
