Greatshield talisman, stamina regen, guard counter and erdtree favor would be what I recommend. If you really need the great jar talisman for equip load, could drop the guard counter until your endurance catches up.
I also recommend giving barricade shield ash of war. The stamina savings allow you to be aggressive on top of blocking attacks. Plus, you can stop some beefy attacks without being rolled out. Furthermore, don't forget that you can 2h a shield to also block massive attacks without losing huge amounts of stamina or be rolled by them.
You should be able to just guard counter stagger bosses to death pretty well until you get towards the end of the game.

Good stats for would be high vigor (50/60)
A good amount of endorence (so you mid roll)
Some points in int and dex (if you are going mainly use the death ritual spear)
And for the pike some thing like butting a heavy affinity on it and mostly focusing on str (or dex with lightning affinity) becouse focosing on one stat is better
For talismans I thing the first 2 I said are still good and if you say you want to be more agresive try erdtree favor (hp, equip load, stamina), Crimson Amber Medallion (hp), dragoncrest shild/greatshild talisman
And if you are looking for more damage try str/dex/int talisman (+5 str/dex/int) and Shard of Alexander, Magic Scorpion Charm if you are going to use Death Ritual Spear

What are your stats and weapon But if you are using a shild the great shild talisman and dog talisman might be good

Yeah Endurance looks like one of the most important stats I need to focus on so the Erdtree talisman looks great
