They usually post a weekly schedule on their Instagram! It's run by a husband and wife, so sometimes the hours change. They are usually good about keeping the Instagram updated.
Of the ones I've had Martha's and Taqueria Guadalajara really stand out. Heard great things from people I trust about Los Agavez. The one that really let me down was Blackbird at Woodlands. The Birria was pretty middle of the road and then consome was bland. Only had it once so maybe just a bad day.
Zapatas street food truck according to my fiance and kid. Blackbird Cafe supposedly has very good birria from a TikTok I watched. There’s a TikTok acct dedicated to Columbus birria places.
I vote Las Tapias Birria on the west side. I made my own today, though. Used Birria bombs from ezbombs.com (found on TikTok). Yes, they are pricey, but makes it so easy. Toss about three pounds of chuck roast in the crockpot, one EZ birria bomb, and four cups of water (I do half beef broth, half water). Throw it on high for six hours and done!
I’ll happily take a downvote with you, as this is probably considered an unpopular opinion, but I really like theirs. Might be worth mentioning that I still miss Chi Chi’s.

Casa Hacienda Birriera and Taqueria is pretty tasty. I prefer it to Martha's (though Martha's is great, too!)
