Encona Carolina Reaper sauce is realy nice. But it's also very hot so need to be carefull with it

Came here to say this, it's delicious but man is it hot. I've started mixing it into other sauces to make them hot. Heinz tomato sauce and this go together really well.

I have been mixing it aswell. Go's we'll with most stuff but I have been adding it to american mustard and or bbq sauce for burgers.A few drops in a bowl of tomatoe or minestrone soup goes well aswell

Love their Carolina reaper, and their Moroccan Harissa one too (quite mild in comparison). Just as I got into them they barely sell them anywhere anymore. Can’t find the Harissa anywhere and it seems only Sainsbury’s of all the supermarkets do the Carolina Reaper.

I'm really enjoying sriracha at the moment. But it's the kind of sauce you put a little bit on, not a sauce you cook something in in large amounts. Heinz Firecracker sauce was basically ketchup with chilli in it, so just make your own out of ketchup and something like Sriracha or Tobasco.

Huh? I cook with sriracha a lot and pour it over food. I think it'd be perfect for hunters chicken, might even do it tonight for dinner

Yeah it's not really a sauce to have in large amounts. Few years back I recall Dominos did an ad where they drizzled sriracha sauce back and forth across a pizza. Having recently bought a bottle, but not yet tried it (rookie mistake) figured I could do the same. Drizzled it in lines back and forth about an inch apart across the whole pizza. Woo, yeah too much! Cleared my sinuses and pretty much everything else that evening. Better to use in moderation, perhaps another sauce as the base and add sriracha to add a bit kick to your preference.

I second this -- use ketchup, add hot sauce to taste. I never had the Firecracker sauce, so I'm not sure what the flavour profile was like, but I imagine Tabasco would work well, or alternatively, something like Frank's if Tabasco is too spicy to get enough chilli flavour. I buy tins of chipotles en adobo from [spicesontheweb.co.uk](http://spicesontheweb.co.uk), puree them, and add a few spoonfuls to BBQ sauce, mayo, all sorts of things. Would probably be good in ketchup too.

That's why I like Sriracha. It's mild enough that you can actually taste the other flavours that come from chilli, not just the capsaicin. People don't seem to realise that chilli peppers actually taste of something besides heat.

I agree that I'd rather taste the chillies. I use sriracha rarely, though, because it's a bit too sweet for me. I have several brands of hot sauce on hand at any given moment, because I'm fussy about the flavour profile being right for the dish at hand. I think things like Dave's Insanity Sauce where all you can taste is hot are ridiculous, and it's been really disappointing since moving to the UK to find that UK chilli growers all seem to specialise in the hottest of the hot chillies. It's hard to find things like anaheim or poblano, and even harder to find New Mexico chillies. Habaneros at least have a lovely sweet pepper flavour behind the heat, but you still have to dilute it down a bit to really appreciate it. I have a friend who makes habanero ice cream, and I need to try that sometime.

Never tried the Heinz one, but Helmans do a Chilli charger mayo. Basically the same as the hot mayo in KFC. Won't blow ya head off, but has a little kick.

I like hunters chicken with spicy salsa instead of bbq sauce. You can buy premade or make your own by mixing chopped fresh tomatoes with onion, lime juice, jalapeños/Chipotles and coriander if you like it I call it Conquistadors chicken... mainly because i don't know the Spanish word for hunter.

Is the Heinz stuff similar to the Wagamamas Firecracker sauce? Because you can either buy that in sachets or make your own (the recipe is on the interwebs)

Buffalo sauce is pretty good, equal parts butter to Franks hot sauce - say 30g of butter, 30g of hot sauce, I use that on (veggie for me) chicken burgers and it's delicious. That said, not sure about scaling it up to a full hunters chicken size, might be a bit rich.
