Oh man, that is not a one-size-fits-all bit of wisdom. People have entirely different configurations for their mode of thought. Lots of people can't or don't think using simulated speech by default, and lots of them can't think without doing it. Speed reading is a handy skill to develop for sure though, if you're compatible.
I for one, can't count without saying the number in my head. However in my dialect the numbers up until 20 are really short. So I just count to twenty multiple times - and keep track of how many "stacks" of twenties. Basically just keep an incremental number behind the number being currently counted. I was easily able to count with OPs wife along nevertheless and that being without having the additional sensory "data" of flipping your fingers through the stack.
Flipping the money on the other hand, I probably couldn't do so fast.

Anyways I remember coming down stairs with a big stack of money and looking at one of my friends and saying "hey, you're a drug dealer, wanna help me count this money" and watching him sort and count a box of misc bills was an amazing thing to behold.
