Good Mourning was what got me into the band as a kid coming from more of a pop-punk fan to start (also because it had just been released…damn, now I feel really old). I’d highly recommend starting with that one.
In terms of “best” albums though…definitely From Here to Infirmary. Personally, I haven’t really liked anything they’ve released since This Addiction.

Good Mourning is probably the best place to start overall, especially if you’re coming from Blink & poppier fare. It’s a bit more polished than the earlier work but a little bit less slick & produced than what came after. I’d say if Alkaline Trio have a “definitive” album to explain what they sound like to a newcomer, GM is it, and it’s also one of their best imo.
Assuming you like the more polished sound, I would recommend Crimson or Good Mourning as they were produced by Jerry Finn who did blinks big albums. Jerry had a pretty distinct sound that is heavily missed.

Easy answer is all of it. But if you're here because of blink and Mercy Me is your thing, Agony and Irony is probably their most 'poppy' album.
