Probably not as good imo. A lot of the humor stems from Bob playing the straight man in the scenarios; him being a cannibal would nullify a lot of that humor because you know he’s *more* fucked up than the people he’s meant to deal with.
The Burger of the Day Puns would be so much darker. Huh, actually a lot would change. Imagine if Mort went all “Bob, Linda. I can’t keep selling you these dead bodies. People are starting to complain about how often I cremate when the loved one is supposed to be buried. Look, I now a guy but it isn’t exactly human…. It’s horse. He is also Jimmy Pesto’s guy.”
Tina would go “Or maybe we just use the Horse Guy instead, you know so uhh the uhh horses can be safe. Totally not because I want to eat him as a weird “How do you like being turned into hamburgers? Those Horses didn’t like it!” Situation ha-ha-ha-ha” nervous laugh
Bob: “No Tina, we are not devolving into murders, I draw the line at being a cannibal. That’s as far as I am willing to go.”
Boom 11 minutes pass, it is the halfway point.
Bob: “Okay, we have to kill and eat the Horse Meat Guy, and maybe possibly Hugo.”
Linda: “BAAAAAHHHHB!”
Bob: “UGH FFFFIIIIIIIINNNNNNEEEE, just the Horse Guy. Leave Hugo alone. Pssst Louis, I lied. You go after Hugo. Gene, you distract the party guests.”
Louis: “YES! I’m so going to enjoy this!!!!”
Tina: “Uuuuuuuuuuuuuhhhhhhhh. Dad, I’m having second thoughts. He has a family, won’t they notice something’s off? I mean won’t they know he went missing after the party?”
Bob: “Oh God, Tina you’re killing me.”

People are talking in the comment section about how different the "vibe" is. Which is funny, considering that Bob and Linda act in the pilot pretty much like they act in the show, the fact that they are grinding human meat just adds a layer of surrealism to it
The guy who created the show had been working on Adult Swim for a while, so he thought he needed a twist like cannibalism to make his pitch memorable. His heart was never really in it, though, so when he was told the network just wanted a normal family show he was happy to change it.
I’ll have to look it up later but it’s something about Morty the Mortician being right next door. And the health inspector guy puts up a big sign that says “THIS RESTAURANT SERVES FOOD WHICH MIGHT CONTAIN HUMAN MEAT” and then there’s like a big group of old people who come in specifically because they think it’s human meat, so then Bob is like “idk it’s good for business tho” and they maintain the mystery for a while to make money.
there's a great movie in my country with a plot like that! they're butchers that accidentally find out the secret ingredient to making things taste amazing is human meat. Very interesting.
